As is my custom, I showered those bad boys with the trio of salsa verde, cilantro and lime. The tortillas were dipped in oil then heated to a nice medium finish, not too soft, not too crispy. So there I was, sitting under the warm July sky, admiring the work of art that was presented into my hands. ![]() He proceeded to slice the puerco into layers, catching them onto a plate that was then transferred onto my tortillas. With extreme precision, he spun the trompo around its base to expertly select the perfectly charred section of meat that was ready for sacrifice. One of the taqueros was armed with a large knife and spatula-that guy was my hero for the day. Tacos Regios El Coquis is located in the Aldine area north of Houston. Inside the taco truck, I could see a team of taqueros working the line, prepping the meat, cutting the veggies, and lighting the charcoal that would soon create the fire for the trompo at the center of the truck. Servers were busy taking orders, delivering tacos, and opening ice-cold Mexican sodas for delighted patrons. A large speaker next to the tables was playing a mix of classic cumbias and corridos by Rigo Tovar, Los Mier and Los Tigres Del Norte. (Food trucks that operate within Houston city limits are not allowed to have tables and chairs within 100 feet, per city health department ordinance.)Īs I strolled from my Chevy towards El Coquis, I knew I was about to experience something special. Because they serve food in this unincorporated section of Harris County, the truck is allowed to have seating in close proximity. The truck is located in the parking lot of a neighborhood convenience store in the Aldine district north of Houston.
